Summer Vegetable Bulgur Salad

Partner with my falafel recipe and garlic lemon hummus

Ingredients:
– Bulgur wheat
– 1 cup basil leaves
– 1 cup cherry tomatoes (sliced in quarters)
– half cup chopped cashews
– 1 tbsp olive oil
– 2 stems spring onions
– 2 tbsp lemon juice
– salt and pepper to taste
